Dinner for Two

Because of our wildly divergent schedules — not to mention total disagreement in what foods are considered palatable — hubs and I rarely eat together unless dining out. Instead, most evenings I eat like a single person, petting my cat and reading a book while slurping down far too many foods that emerged from a box just minutes before. Two hours later, I watch hubs prepare and eat his own meal.

Recently, however, I vowed that this would change. Not the schedule, perhaps, but the cuisine. After all, I’m on the road to good health and inner peace. My horoscope told me so, and the calendar backs it up.[1]

After a little thought, I had the perfect meal idea. Since everybody knows that breakfast foods taste best after 5 p.m., I cased the refrigerator and cupboards for supplies, and soon I was chopping, whisking, stirring, and simmering until I had a lovely breakfast burrito — double wrapped for structural integrity, since I lack the gene that tells me when my tortillas are too full to tuck into without tearing. Two bites in, I had sour cream all over my fingers, Basil the cat begging for attention on the stool beside mine, and an empty paper towel roll in front of me. But the burrito was delicious, so I had no cause for complaint.

An hour later my husband came home, inhaled the remnants of cooked eggs, chiles, and green and red peppers, and declared himself hungry for a breakfast burrito of his very own.

Halfway through teasing him about being a follower, the good news struck: We finally have another recipe we both enjoy. I think that makes four.

    Congratulations on this, Caryn!  DH and I (though NOT experiencing differing schedules) have the same difficulty finding things we both like -okay, really I mean things that HE likes, because I eat almost anything – that are made at home without too much trouble.  It’s unfortunate that restaurants (where both can order what THEY like) are made so convenient by this problem…

    @Katie – We fall into, the same trap of going out to dinner instead of making stuff at home, though we do try to eat at home instead. Sometimes we just make our own meals and eat them at the same time.

    @Alyson – I can see why! You can throw in whatever looks good.

    @Amy – So true! We’re working on that one, too, but it just depends on the day.

    @Melina – If you haven’t tried them, I recommend doing so. You may like them, too. Smile

    Cool idea that worked out for you, Caryn. We’ve done the same thing around here – have breakfast for dinner. I wonder if the reverse is acceptable? Pot roast for breakfast?

    @Pam – So true! You can just throw in whatever’s available. As for The Basil, he doesn’t get breakfast burrito, though he does like for me to pet him while I eat.

    @Mama Zen – Hope it’s helpful! Maybe now you’ll know what to make for dinner. I know I always feel better once I get it figured out!

    @Kath – Don’t know about pot roast, but I’m usually more in the mood for lunch or dinner foods for breakfast. But pancakes for dinner? Yum!

    Oh, I love breakfast burritos, and the ingredients you put into yours sound delicious.  (I’ll have to add chiles next time!) Kath’s comment about pot roast for breakfast made me laugh. We’ve done something close to that here, I’ll confess (garlic roast beef Smile. Leftover pizza first thing in the morning is an all-too-common “breakfast” food in our house…so, yeah, to even the scale, we’ll have waffles or pancakes for dinner sometimes, too.

    I LOVE breakfast burritos.  I think you’ve given me a good idea for how to ring in the New Year tomorrow morning.  Denny’s, Bob Evans, Cracker Barrel, IHOP, watch out!!  I’m coming and I’ll be bringing the appetite.  Wink

    That is wonderful! DH and I have drastically different tastes. His favorite food is a McDonald’s cheeseburger. Second favorite: a big pile of eggs with crispy bacon. *sigh* My favorite food is organic, brown rice miso soup, and I’m allergic to dairy and eggs, don’t eat pork, and I’m a most-of-the-time vegetarian.

    But eating with your loved one is such a valuable thing, you know? It’s one of the joys in life. Right now, we’ve found two dinners we both enjoy. It’s tough!

    @Marilyn – I just put in a few of the mild chilis from the can, or I use green chili salsa. As for breakfast, I’ve been known to have cold pizza myself. Or whatever else is leftover.

    @Joanne – That’s hilarious! But I do love his name, so it worked out well. I shudder to think what our kids’ names would be if we used our favorite restaurants. None of them would work well!

    @Marcia – Funny thing is, I never eat them when I’m out. Just at home. But you do make them sound good, so I’ll have to look for them on some menus.

    @Spyscribbler – Our tastes are that different, too. Makes it nearly impossible to find things we both like to eat, but it’s this gigantic accomplishment any time we do.

    I love breakfast burritos too – anytime! We do the breakfast for dinner thing periodically, usually when there’s no dinner food readily available, and it’s usually pancakes. Smile

    @Mary – How funny! I do the same thing, becoming inspired in the summer and less so in the winter. Maybe it’s because there are fresh ingredients available.

    @Angela – Your experiments sound like fun!

    @Robin – Pancakes are usually our breakfast-for-dinner option, too. I actually found a recipe for them that we both enjoy. With turkey bacon or sausage, it’s a full meal.

    @Stacy – You’re right. Pancakes do sound good right now. It’s all about the power of suggestion.

    @Keri – I take it you’re into that, too. It makes me feel less weird that so many other people like breakfast for dinner, too.

    @Eileen – I wish I liked to cook! I’ve tried to romanticize it and trick myself into thinking it’s fun, but it’s really just an obligation.

    @Alyssa – Huevos rancheros are sounding good right about now, too. Actually, Mexican food sounds good most of the time.

    @Virginia – Yes! We have that same problem. If only our tastes — and schedules — would mesh.
